
Lately, I've had a that nagging feeling of fatigue due to the drastic reduction of carbs in my diet. I think it's important to take a break from the diet and the formula once in a while just to keep the diet going and to continue to see progress, and, believe it or not, I AM seeing progress.
I am losing the puffy look of the excess water weight that I was carrying and the swelling in my hands (namely my fingers) and my feet (mostly ankles) have also gone down...In fact, I wish I had a before shot so I could see what my ankles looked like this time last week because they look and feel 99.9% normal!
Taking the muscle relaxer, the Aleve (anti inflammatory), the acetaminophen-cod (for pain) and the lisinopril (for high blood pressure) all seem to be helping me to get more rest, relax, and drop water weight...
What the research says about taking diet breaks...
-it will help to fully restore muscle glycogen
-when you don't,your metabolism is going to plummet
-you need to refeed to offset the down regulation of your metabolic activity
-it helps to restore the thyroid gland back to where it needs to be
Taking a diet break is NOT an excuse to be a glutton...
-women should not exceed 150g carbs/men should not exceed 200g carbs

NOTE- Supposedly,less than 130 carbs a day results in lean tissue being broken down. Possibly glycogen and water. If this is the case, then I THINK the Roca Labs formula helps to reverse this effect, but I can't say this for sure. KEEP IN MIND I DO NOT use the flavor packets or the Crystal Lite that comes in the box. I use a mixture of ORGANIC Santa Cruz lemon/lime juice and filtered water or ORGANIC fruit juice.

I want it, the starchy stuff- potatoes, white rice,...a bagel...a tortilla but aside from the Health Nut bread, I have been afraid to indulge. I can't remember the last day I had pasta, for example, and I am 1/2 Italian. I just can't seem to justify eating pasta right now with so much weight to lose, even if it's whole wheat pasta-which, by the way, I have tried and find disgusting. And donuts? What's that? I NEVER touch the stuff.
So why am I so fat?
-Overeating (too many calories going in)
-eating too late in the evening
-a sedentary lifestyle that barely burns the energy. My body saves up all that extra energy as fat in my body.(not enough calories going out)
-SOMETHING POWERFUL IN MY LIFE STORY CHANGED

Tonight, I'm preparing Oven Baked Bone Suckin' Short Ribss...
Cook Time: 3 1/2 - 4 hours
-Signature Spice Rub
-red onion
-scallions
-garlic
-low sodium vegetable broth
-celery
-green,yellow, red bell peppers
-slivers of jalapeno for heat
-Bone Suckin' Sauce
Preparation:
Remove short ribs from package and boil them in a mixture of lightly salted water and garlic cloves for 30 - 40 minutes. Skim the floating blood (dark brown) off the surface of the water when it forms. Save some of the water for later. Preheat oven to 350 - 400°. Arrange the short ribs in a heavy pan (I use Wolfgang Puck)on a bed of vegetables (the onions, celery, and peppers). Add 1/2 can of broth (vegetable or beef) and pour 1/2 of the Bone Suckin' Sauce over the top. Cover w/ heavy foil.
Add more water or broth as needed while cooking to keep the ribs from becoming dry. When finished, brush heated Bone Suckin' Sauce on top and let rest before serving.

Baked sweet potatoes baked w/cinnamon and sugar.
Cook Time: 45 minutes
Total Time: 45 minutes
Ingredients:
-2 sweet potatoes, even in size
-extra virgin olive oil
-butter
-cinnamon
-sugar*
Preparation:
Scrub sweet potatoes; brush each with vegetable oil. Arrange potatoes on oven rack and bake at 450° for 35 to 45 minutes, until tender. Remove at once and prick with a fork to let steam out. Cut a 1 1/2-inch cross in the center of each potato. Hold each potato with pot holder and press upwards until filling "bursts" up through the cuts.
Top with butter and sprinkle with salt and paprika or a mixture of cinnamon and sugar.
Serves 2.

Last night, I ate 2 ribs, 1 whole baked potato w/butter and sour cream and 1 spoonful of the sweet potato fries around 7:30PM. Enjoyed it. The only thing I would do differently is make the sweet potato fries crispier and thicken the sauce. Otherwise, the meat was very tender-nice and moist and the flavors were just right-not too sweet or overpowering.
