Day 03: Deepen Your Resolve

Late Breakfast-Keeping it Healthy w/ a Homemade, 100% Fat Free Yogurt/Mango Smoothie using:

1 cup
Fat Free Plain nonfat yogurt,
grade A*

1 cup
Fat Free Lactaid, Calcium Fortified,
Lactose free



1 cup Sunburst mangos, Mango Del Sol, Frozen
4 drops Stevia Extract, All Natural Herb, Zero Calories Sweetner (optional)

There is no need to add ice cubes to either cool or thicken the smoothie. In fact, I personally find this smoothy just as good with or w/out the sweetner as well.

This will yeild: 3 cups or 0.75L. of a rich, creamy, thick smoothie. This will probably taste even better with a fresh twist of lime but I am all out for now.

If you are not used to using the Stevia Extract, you might try Splenda w/ Fiber as an alternative. I prefer Stevia Extract, in its liquid form, because it is also easy to travel with. I take it with me in my purse or exercise bag and use it whenever I have coffee or tea outside of the house. It's expensive though. I usually buy mine at the Whole Foods Market or the Fresh Market. I haven't found a Trader Joes out here but I imagine that they may carry it as well. Don't you just love the way the straw sticks straight up in the mug? ;)

I entered my data into my "My Calorie Counter" journal and here are the results of my late-morning-smoothie:

Note that the conversion table tabulates your daily caloric intake for you for your entry. This is based on the data you enter for your personal goals each day. Therefore, I have now consumed approximately 40% of "my" daily caloric goals.

Spent a little time perusing this site: Evolution and Holistic Health: Nutrition/ Diet/ Exercise/ Environment/ Medicine/Drugs /Alternative Healing: "http://www.spaceandmotion.com/health/index.htm" and continuing my quest to completely and totally de-clutter my space. I am relentless today! Dumping everything and anything work related that I have not used in at least two years. There simply is no need to keep hard copies of anything that can be found on the School Board's website in my home... car... and especially in my home office.

Lunch will be light today due to the late morning smoothie. It's important to eat something every 3-hours or so to increase your metabolism and to prevent you from binge eating. I will speak more about this topic at another time... Let's just say that my goal here is to improve my diet by eating healthier as opposed to only focusing on weight loss. The pictures help me to "think" and to "plan" what goes into my body BEFORE I consume it. Entering the data on the online journal helps me to see the long term effects, immediately.

One thing to note is that it is VERY IMPORTANT to watch your portions. READ THE LABLES! This seemingly small portion of soup actually has two full servings in the box. Here are the Nutrition Facts you need to know: I have now consumed exactly 54% of my daily caloric goal.

With this knowledge, I measured a cup and popped it into the microwave. I like my soups pipping hot - hence the red ring around the bowl and I added 1/4 teaspoon of Cayenne Peppers (I paid 2.10 for 0.14 lb @ 14.99 a lb. at the Fresh Market) to give it an added boost and because it has been touted to help with digestion, kill bad bacteria, prevent ulcers from forming in the stomach, improve circulation by increasing blood flow, reduce cholesterol and triglycerides and boosts the immune system.

Greater blood flow means that it raises your energy levels and improves movement. Personally, I just love it! I was raised eating chili peppers and I have to have chili or hot sauce on almost everything!

6:18PM Kimichi Baby!!!!

Dinner tonight was soup, salad, and a side of rice. Believe it or not, I am completely and totally stuffed!

A 15 oz. jar of Kimichi (Mild) yields 7 servings. This was a pain to calculate so I had 1/4 of the jar and tightly sealed and returned it to the refrigerator. I will include recipes and information about Kimichi soon...

This is what a serving of baby spinach looks like. Difficult to know whether or not you are suppose to measure it loosely or slightly packed so this is a loose measure...

Here you can see that if you use a smaller plate, your portion size looks bigger. Stacking the plates is just something I do to make the plate "feel" heavier. A little mind game I play with myself... I wish I could find one for the salad dressing. One serving is small. Mixing the Kimichi and the Asian Chili Garlic Sauce into the salad helps. Don't be tempted to grab the bottle and drizzle on more...

Ever wonder what a serving of rice REALLY looks like? Well, here it is. A nice big whopping 1/4 of a cup! (Note the sarcasm here. It's teeny.) I topped mine with Asian Chili Garlic Sauce. (I'm hooked n this stuff!) Next to Cholula, this is my favorite condiment!

8:43PM: Today's Fitness & Nutrition Totals

Tomorrow's goal is to reduce my sodium intake to 1200 and keep my sugars below 50. I also need to increase my protein intake. I am the most proud of my water intake (1/2 gallon of Distilled water).

Not bad given that I spent most of my day de-cluttering (which also burnt calories) and blogging. My goal is to burn a minimum of 500 calories every day. One pound of fat = 3500 calories. If I maintain this level of activity, it will take one week to lose one pound. Likewise, if you eat 3500 calories more per day than your body needs you will gain one pound of body fat.
