Pre Roca Labs Food Journal: Day 1: Power Oatmeal & Protein Punched Baked Eggs

Right in the middle of filming how to prepare this high protein, heart healthy Power Oatmeal breakfast, my laptop restarted and I lost the video footage so I am blogging in the recipe and will add a picture/video later.

Power Oatmeal 664 calories



ingredient's...
-1/2 dry rolled oats (Not the instant)
-3/4 cups filtered water or milk (Vanilla Soy Silk or Lactaid)
-1 Tbl honey (optional) or 4 drops of liquid Stevia
-1 Tbl Extra Virgin Olive Oil (MUFAS)
-1 pkg NUT-rition Planters Omega-3 Mix
-1/2 sliced banana

1. In a microwavable cup/bowl, add and mix 1/2 cup dry oats, 1 Tbl olive oil,and 3/4 cup water or milk. Microwave for 1-1/2 minutes.

2. Add sliced banana and sprinkle 1 pkg NUT-rition Omega-3 Mix and 1 Tbl honey on top

3. Optional- Eat it as is or pop in the microwave for 30 sec. - 1 minute

Protein Punched Baked Eggs 393 calories
I prepared this without adding milk, flour or baking soda in a non stick skillet - to - oven safe pan.

Ingredients...
-6 Eggland's Best egg whites
-1 whole Eggland's Best egg
-2 strips Turkey Bacon
-1/4 sliced green/red/yellow bell pepper
-rough chopped onion
-1 whole chopped Roma tomato
-grated Parmigiano-Reggiano (preferred) OR 1/4 cup Sargento Fancy Shredded Mozzarella Cheese
-1/2 - 1 cup Dole Baby Spinach

Pre heat oven to 350

1. lightly whisk 6 Eggland's egg whites and 1 whole Eggland's egg.
2. lightly grease an oven safe pan with Pam Organic Olive Oil cooking spray & cook the two strips of turkey bacon until crisp.
3. Add Dole Baby Spinach, chopped peppers, onions and tomato to the same skillet you cooked the bacon in and the eggs. Stir and place mixture in the oven.
